We must learn to find a balance in everything we do in life. Even for the simplest of things in our every day existence, such as food, exercise and work. There has to be a balance.
Every lady needs to know that the way to a heart is through the stomach so it’s good to know how to prepare sweet delicacies to your loved ones, friends and also guests.
This is one of the special types of foods to prepare
MUKIMO WITH MINCE MEAT
1 bunch pumpkin leaves with stalk
1 cob of fresh maize
1 small ripe pumpkin (cubed)
5 pieces coking bananas
2kg potatoes
Method
· Wash the pumpkin leaves and remove the skin from stalk and slice or chop them.
· Boil the pumpkin leaves in salt water for 30mins
· remove from the fire and strain the water ,blend until fine using a domestic blender and if you don’t have one, chop until fine
· meanwhile, remove the maize from the cob and boil for one hour
· add the potatoes and boil for 10mins
· add the potatoes and boil for 10 mins
· add pumpkin and the bananas and boil for a further 20min
· remove from the fire and strain the water and add seasoning
· at this point add the blended pumpkin leaves and mash until smooth using a wooden spatula or a masher
· It is best served hot.
MINCED BEEF IN RICH HOME MADE TOMATO SAUCE.
Ingredients
1kg minced meat
1-2 tablespoons vegetable oil
5 ripe tomatoes skinned and finely chopped
4 garlic cloves chopped
2 red onions chopped
2table spoon tomato paste
1 stalk celery finely sliced
Few rosemary herbs finely chopped
Seasoning method:
· Heat a pan until hot then add the minced beef and cooks until golden brown. Remember to stir regularly. In a separate pan heat the oil and then add in the onions, the garlic, celery and the rosemary herb. Cook briefly making sure they don’t burn.
· Add the tomato paste and cook well, then add the tomatoes.
· Cook for a while and stir occasionally.
· add the minced beef and seasoning
· cook for around five minutes and add some water then let cook for 10min
· Serve hot with the mukimo made earlier.
· for garnishing cut fine tomato cubes and sprinkle on top of the minced meat
Fish is a natural choice when it comes to serving healthy meals
Traditional fish and chips
Serves 4
4 large potatoes cut into chunky strips
250 ml (1 cup) flour
5ml (1 table spoon) baking power
5ml (1 table spoon) salt
5ml (1 table spoon) freshly ground black pepper
250ml (1 cup) milk
1 egg
Oil for deep frying
4 tilapias fillets
Method:
1. Heat oil in a large pot. Place potatoes on a medium bowl of cold water.
2. Remove potatoes from water in batches and pat dry with paper towel.fry potatoes in hot oil until tender, remove and drain on paper towel
3. In a medium bowl, mix flour, baking powder, salt and pepper. Stir in milk and egg until mixture is smooth and allow to stand for 20 minutes
4. Place fish fillets in batter, one at a time and place in hot oil.fry until fish is golden and drain on paper towel.
5. Return potatoes to hot oil again and fry in batches for 1 to 2 minutes until crispy, remove and place on paper towel to drain excess oil.
6. serve fish and chips garnished with lemon
